Kimchi Fried Rice

It has been a three months since I posted anything. The weather has been too hot for me to garden or cook anything new. My movement around the house has been minimal.

Since it's been much cooler this week, today, I made this delicious dish I haven't made in over 2 years. In Canberra, I used to go to korean restaurants a lot and they would give you kimchi as a side dish. I don't like sour, so I don't really like the taste of it. But I would bring the little box of kimchi home and cook my own kimchi fried rice the next day! Because it's mixed with everything else, it doesn't taste as sour.

I've been wanting to cook this for the mister for a while now, but never got the chance to. Then last week, my bestfriend coincidentally cooked this dish and sent me a picture of it. It had an egg and some seaweed on it. I've never cooked mine with egg before but the presentation looked so good I decided to follow it!

The egg was the cherry on the icing. It made the whole dish taste so good! My boyfriend loved it and we agreed it's one of the best dishes I have made in a while. It's not totally paleo because of the rice, but you can always substitute it with cauliflower rice. I have failed making cauliflower rice in the past and I didn't want to ruin this dish so I only cooked a small amount and put a lot of meat in it.

Ingredients:

3 chicken breasts, cubed

2 cups mushroom

450g kimchi

1 cup rice

1/2 cup banana prawns, peeled and halved

1/2 cup mussels

1 egg

salt and pepper

In a frying pan, cook the chicken breasts until browned. Add in the mushrooms and let it simmer until most of the liquid is gone.
Add the kimchi and stir until mixed. Add the rice.
When everything is mixed together, mix in the prawns and mussels.
Fry an egg in a separate frying pan and have it with your kimchi fried rice!

Note: the rice is better if cooked the night before and refridgerated

Surf and Turf with Kale and Spinach

We have been having lots of Surf & Turfs lately because it's easy, quick and delicious! But you will have noticed that our kale from the vege patch has finally made an appearance as a side along with the spinach! That's right, now that we've removed the snails from the equation, the kale is slowly growing back with leaves and all - not just stems!! Soon, we will be able to make kale chips with our food dehydrator! Can't wait to try it out! Heard so much about kale chips and I will finally be able to try some myself and picked fresh from my own garden as well!

Surf and Turf with Spinach

Surf and turf doesn't seem that special, but the vege that accompanied the dish was! As you may or may not know, we've recently started growing veges in our vege patch and I'm super happy to say that it is becoming a success.

So my boyfriend barbecued some steak and I cooked up some prawns and mussels with garlic and butter and plucked some spinach from the backyard and voila!

Sushi with Sweet Chilli Mayonnaise

Deciding what to pack for a surprise picnic can be quite difficult. You can’t bring the conventional stuff like sandwich or cheese and crackers (though we did bring some brie cheese because dairy is one of the few things we don’t cut out. In fact my boyfriend drinks at least 2 litres of milk a day to gain muscle weight – that and lifting of course. Just last week alone, we bought 32 litres of milk and none of it gone to waste). So ended up bring this paleo sushi, paleo cheesecake, avocado chocolate mousse to go with some strawberries, bananas and kiwi and some brie cheese.

Sushi
Ingredients:
canned crabmeat, drained
cucumber, sliced
capsicum, sliced
prawns, deveined, shelled and cooked
eggroll
avocado, sliced

Note: I haven’t actually perfected the eggroll yet, when I have, I will post a recipe on the blog. Make sure to drain the crabmeat, cook the prawns through and slice all the other ingredients up. Lay them on the seaweed sheet and roll it up. I didn’t drain the crabmeat very well so the seaweed got a little soggy but it was healthy and delicious! Go ahead and practice making your own sushi rolls for picnic this summer!

I would also recommend stuffing in pieces of chicken from your leftover roast. Since this was a seafood based sushi, I whipped up some sweet chilli mayo to go with it.

Sweet Chilli Mayonnaise
Ingredients:
2 tbsp mayo
a dollop of sweet chilli
a pinch of cayenne pepper

Mix the ingredients together and adjust according to your taste.

Chicken Satay & Satay Sauce

Paleo Gluten-Free Satay Sauce Chicken Satay Recipe

My boyfriend loves satay sticks because they are all meat and sauce. I thought I would try to make it for him as a surprise at home one day and then for his birthday for his 4-course meal. That day I made him a soup and prawn satay sticks for entree, a big scotch fillet steak and a chocolate mud cake.

You can make these satay sticks with prawns, chicken, beef, pork or lamb. I normally make these with chicken or prawns.

Satay Sticks
Ingredients:
soy sauce
sesame oil
sugar
corn flour
prawns, chicken, beef, pork, lamb

Marinate prawns, chicken, beef, pork or lamb with soy sauce, sesame oil, sugar and corn flour. Put them on a skewer and fry them on a frying pan until they are cooked.

Note: I did use brown sugar instead of normal white sugar because I didn’t have any and it doesn’t seem to taste any different anyway. But you could try it and let me know what you think.

Satay Sauce
Ingredients:
2 tbsp chunky peanut butter
a dash of coconut cream
a dollop of sweet chilli sauce
a pinch of cayenne pepper

Mix all the ingredients over a frying pan on medium heat until the mix is simmering. Add more coconut cream if it is too dry. Serve with the satay sticks.
