If you want to have something sweet but don't want to go through the whole process of mixing all these things to bake a cake just to satisfy your cravings, here is something healthy, quick and easy to make

 

Ingredients:

few handfuls of blueberries

1 tbsp lemon juice

1 cup almond meal

1/4 cup melted coconut oil or butter

stevia

1/4 tsp cinnamon

2 pinches salt

1/4 cup chopped hazelnuts

It is pretty expensive to get pizzas with gluten-free bases at the restaurants. It never seemed an exorbitant amount when we paid for these pizzas until I decided to surprise my boyfriend and make our own gluten-free base... our paleo base pizza.

 

I think compared to normal base, it is much easier and quicker to make the base since you don't have to let the dough sit at all and I love that we make our own pizza now because we can put whatever we want on it. DELICIOUS! The best part about this is that it costs next to nothing! The base ingredients cost about $6 and I can make 3 bases out of it and we get a meal out of each pizza! Depending on what you put on the pizzas, it costs about $5 for a pizza between two people! Is this a good deal or what??

 

On our pizza, we put an egg, bacon, mushrooms, mussels, sausages and lots and lots and lots of cheese.

 

Ingredients:

2/3 cup linseed meal

1 cup warm water

2 tbsp. butter

7 tbsp cornflour

2 tsp baking soda

3 cups almond meal

pinch of salt

So since my post about cutting chocolate out, I have fallen off the wagon around July. So I went on a chocolate cut for about 7 months before I decided to have some again. Some became more than some and finally my boyfriend decided I have to quit eating chocolate for a while again because according to him, I'm addicted. So my first day of no sugar no chocolate started on 29th September 2013. It had been 5 days since I last had anything sweet - Saturday, we both decided Golden Gaytime ice cream would be my final naughty dessert before I commence weaning off my sugar addiction on Sunday.

 

The first few days was alright. I brought banana to work so that I would have something sweet and not go digging in the chocolate box we have at work. Then yesterday (Thursday), someone brought cake to work. First work cake I did not have. :( and then my boss offered me Tim Tams. First time someone offered me something and I had to say no. TWICE IN A DAY! There was sugar all around me so finally I decided enough was enough. I have an addiction, I need to get off sugar but I WANT sweetness.

 

I have recently come across Pinterest, and they have amazing paleo recipes on there. I found this crepes recipe and used it as an inspiration and made my own version! Delicious. Last night was also the last night my boyfriend would be home before he went on a car cruise over the weekend so I decided to make us a little treat for dessert before he went off. It is amazing. It's not very sweet, but sweet enough to help with sugar cravings and it is healthy!

 

Ingredients:

2 tbsp almond meal

3 eggs

1/2 cup coconut cream/ coconut milk

1/2 tbsp cacao powder

1/4 tsp stevia

1 tbsp vanilla extract

coconut oil

fresh fruit

cinnamon powder

cream (optional)

This is the next South African dish I made, a melktert! Melktert is basically what it sounds like... a milk tart!

I substituted sugar with stevia, and kind of mixed it in blindly. I've never had a proper melktert before so I don't know how sweet it is meant to be. The boyfriend has a sweet tooth and he said it's not sweet enough for a melktert, so you might want to taste test the batter first.
 

Ingredients:

3 cups milk

2 cinnamon sticks

2 tbsp butter

3 eggs

1 tbsp stevia

1/4 cup cornflour

cinnamon powder

• Mix all the ingredients together in a bowl.
• In a frying pan, heat up some butter and cook the pancakes as you would with normal batter!

The other night I made three different types of meatballs for dinner - Vegetable Meatballs, Sultana Meatballs and Cheese and Mushroom Meatballs.

Last time I made these, I grated the cheese and mixed it in with all the other ingredients. The cheese ended up melting off the meatballs when they were cooked which was rather disappointing. So this time, instead of mixing it in with the ingredients, I chopped them in little cubes and put it in the centre of the meatballs so they would still be cheesy and in the meatballs rather than off them!

Ingredients:

500g mince

1 cup mushroom

3/4 cup herbs (I used stuff from my backyard - parsley, basil, chives and oregano)

1 egg

2/3 cup almond meal (I didn't use this but I would recommend it so that the mix would be less soggy and the meatballs would be more solid)

cheese, cubed

salt

pepper

Made Anzac Cookies for the first time! The cookies, fresh out of the oven, were crispy on the outside and chewy and crumbly on the inside. It was delicious! But they don't taste as good once they get cold like most paleo foods... So I recommend indulging once they have cooled a little bit to let them set and then eat your way through the entire batch!!! or share them with your housemates... Also I had to add quite a bit of water to make it doughy. Will have to try making them with an egg next time and see if it will make a difference.

1 cup almond, flaked

1 cup dessicated coconut

3 tbsp butter

4 tbsp honey

1/2 tsp bicarb soda

1 tbsp water

So this is the third and final loaf of banana bread from last week - milk chocolate banana bread! Unlike the first loaf, it's not made of cocoa powder. This one is made from milk chocolate buttons. Yummm. If you don't like your banana as sweet, go for this one.
