Banana Chia Pudding

Every morning, my boyfriend and I bring greek yoghurt with cream, dried fruits and nuts to work for breakfast. It's delicious, but we've had it everyday for months now and I've been looking for alternatives in case I get sick and tired of my yoghurt mix.

I saw that they were selling Chia Cups at IGA. At $5 a pop, I could easily make one myself! And it's so easy!!! It is so naturally sweet that you could even have it as a dessert.

Serves 2

Ingredients:
2 medium sized banana, chopped
4 tbsp coconut cream
2 tbsp chia seeds

Place the banana and coconut cream in a bowl and blend it with a stick blender.
Once it is smooth, mix in the chia seeds
Refrigerate for the next morning or serve immediately!

Fruity Icy Poles

Summer is on its way even though it doesn't quite feel like it yet. In preparation, I have made these delicious fruity icy poles. Cooling in summer and healthier than store-bought ice cream! All you need is a juicer and some fruits! You could probably use coconut cream or coconut water or coconut milk to replace the juice if you don't have a juicer.

Ingredients:

apples

pears

strawberries

bananas

kiwis

Cut up the strawberries, bananas and kiwis in cubes and place them in the icy pole moulds.
Juice the apples and pears together or separately and fill the moulds up with the juice!
You can use whatever fruit you want as juice and as filling. This is what I had and this is what I made!

Banana Pancakes

It has been a while since I've made breakfast on a weekend... and by a while, I mean 2 months. The boyfriend has been working almost every Saturday, apart from when he was in Thailand, and then on Sundays, I get lazy and just want to sleep in. But yesterday I really wanted to try this new banana pancake recipe he had posted on his facebook page, Paleo Perth, a long time ago. The recipe did not disappoint. It was so good! I had adjusted the recipe a bit though. We don't have any almond butter... they are a bit expensive. So I used almond meal instead.

It was a huge breakfast and I was glad one of our housemates had joined us. As usual, I had cooked too much food and we had three bloated bellies by the end of it.

Ingredients:

1/2 cup almond meal

3 eggs

3 bananas

Mix all the ingredients together in a bowl.
In a frying pan, heat up some butter and cook the pancakes as you would with normal batter!

Kiwi and Avocado Smoothie

I took spinach, kale and rocket from the backyard, and milk is just an estimation. If you like it thick, add less, if you want it less thick, add more. You could also add some whey protein! The sky is the limit!

Ingredients:

2 kiwis

1 avocado

1 banana

1 cup of milk

1 cup of kale, spinach, rocket

Blend everything in a blender!

Milk Chocolate Banana Cake

So this is the third and final loaf of banana bread from last week - milk chocolate banana bread! Unlike the first loaf, it's not made of cocoa powder. This one is made from milk chocolate buttons. Yummm. If you don't like your banana as sweet, go for this one.

Ingredients:

1 cup almond meal

2 large bananas

1/2 cup milk chocolate buttons

1/4 cup coconut oil

1 egg

1 scoop whey protein

cinnamon powder

Preheat the oven to 180C.
In a bowl, mash the bananas. Mix in the almond meal, whey protein, coconut oil and egg.
In a pan, melt the milk chocolate buttons over low heat.
Once the chocolate has melted, pour it into the banana mix and gently mix the two together. If you want swirls, don't mix the two completely.
Grease the loan pan and pour the mix into it.
Sprinkle some cinnamon powder on the top and bake in the oven for 40 minutes.

Hazelnut Banana Bread

Instead of making a big batch of banana bread to use up all my bananas, I decided to make a few small banana breads with different flavours. So, following the Chocolate Banana Bread, I decided to bake this delicious Hazelnut Banana Bread. I prefer this one, probably because it is sweeter (maybe because by now my bananas are more riped and there is no cocoa powder to make it bitter). I also added a bit more oil than the other one so it comes out a bit more moist as well. Try it and let me know which one you prefer!

Ingredients:

2 large bananas

1 cup almond meal

1 egg

1/2 cup roasted hazelnuts

1/4 cup coconut oil

cinnamon powder

Preheat the oven to 180 degrees. Grease the loaf pan with some butter or coconut oil.
Mash the bananas and set aside.
In a food processor, grind the hazelnuts. How fine you want it depends on the texture you want the bread to be. Mine was a little coarse because I wanted the bread to have a little texture to it.
Mix the banana, ground hazelnut, almond meal, egg and coconut oil until well-blended.
Pour the batter into the pan and sprinkle the cinnamon powder on top.
Bake for 45 minutes.
Serve warm, with or without butter!

Chocolate Banana Bread

As usual, my boyfriend bought an excessive amount of bananas, so I had to make banana bread before they rot. I decided to try something different! So here's a delicious tasting banana bread with no sugar! You can add a bit of honey if you want, but I think this tastes fantastic on its own served with butter of course!

Ingredients:

2 large bananas

1 cup almond meal

2 eggs

5 tbsp coconut oil

1/4 cup cocoa powder

1 scoop whey protein

Preheat the oven to 180 degrees. Grease the loaf pan with coconut oil or butter.
Mash the bananas and mix in all the ingredients.
Pour the mix into the pan and bake for 35 minutes or until your toothpick comes out clean.
Serve warm with butter!

Sweet Potato Muffins

Paleo Gluten-Free Sweet Potato Muffin Recipe

My boyfriend likes weird stuff. He doesn’t have a particularly sweet tooth, but he likes fruits in mains and food you generally see in mains in dessert. I’ve tried a couple recipes and they have all turned out surprisingly well! Here is one of them!

Ingredients:

2 cups almond meal

1/2 tsp sea salt

1/2 tsp baking soda

1 tsp cinnamon

3 tbsp butter

4 tbsp honey

2 large eggs

1 cup grated sweet potato

1/2 cup walnuts, chopped

2 bananas, mashed or 1/2 cup of blueberries, optional

Preheat oven to 170 degrees. Line muffin tray baking paper.
Mix almond meal, salt, baking soda and cinnamon together.
In separate bowl, whisk oil, honey and eggs. Mix almond meal mix in the wet ingredients.
Fold in sweet potatoes, walnuts and bananas.
Pour batter in muffin tray and bake for 25-30 minutes.
