We can't have ice cream in summer because our freezer dies in summer. Then in winter, when it's not so hot, it works again. We have been putting off replacer our fridge/freezer because well, by the time we get around to it, it's winter again. This has been happening for the last 2 summers. Either way, winter has become to perfect time for us to make our own ice cream!

 

Ingredients:

1 cup chopped macadamia nuts

1/4 cup honey

50g butter

2 cans coconut cream

4 medjool dates, pitted

1 1/2 tsp vanilla extract

2/3 cup raw cashews (soaked overnight)

So since my post about cutting chocolate out, I have fallen off the wagon around July. So I went on a chocolate cut for about 7 months before I decided to have some again. Some became more than some and finally my boyfriend decided I have to quit eating chocolate for a while again because according to him, I'm addicted. So my first day of no sugar no chocolate started on 29th September 2013. It had been 5 days since I last had anything sweet - Saturday, we both decided Golden Gaytime ice cream would be my final naughty dessert before I commence weaning off my sugar addiction on Sunday.

 

The first few days was alright. I brought banana to work so that I would have something sweet and not go digging in the chocolate box we have at work. Then yesterday (Thursday), someone brought cake to work. First work cake I did not have. :( and then my boss offered me Tim Tams. First time someone offered me something and I had to say no. TWICE IN A DAY! There was sugar all around me so finally I decided enough was enough. I have an addiction, I need to get off sugar but I WANT sweetness.

 

I have recently come across Pinterest, and they have amazing paleo recipes on there. I found this crepes recipe and used it as an inspiration and made my own version! Delicious. Last night was also the last night my boyfriend would be home before he went on a car cruise over the weekend so I decided to make us a little treat for dessert before he went off. It is amazing. It's not very sweet, but sweet enough to help with sugar cravings and it is healthy!

 

Ingredients:

2 tbsp almond meal

3 eggs

1/2 cup coconut cream/ coconut milk

1/2 tbsp cacao powder

1/4 tsp stevia

1 tbsp vanilla extract

coconut oil

fresh fruit

cinnamon powder

cream (optional)

Summer is on its way even though it doesn't quite feel like it yet. In preparation, I have made these delicious fruity icy poles. Cooling in summer and healthier than store-bought ice cream! All you need is a juicer and some fruits! You could probably use coconut cream or coconut water or coconut milk to replace the juice if you don't have a juicer.

I have always loved Chocolate Hazelnut ice creams so I decided to make my own batch with a new base because the last recipe used too many eggs and it wasn't as creamy as I would like. It would have to sit out for about 10 minutes before I can start to dig in as it gets too hard. Hope this isn't going to harden too much. Guess we will find out tonight! It was delicious and creamy last night when I first made it.

2/3 cup hazelnut, roasted

3 tbsp cacao powder

1.5 tbsp stevia

4 egg yolks

1 can coconut cream

1/2 tbsp vanilla extract

1 tsp vanilla bean paste

4 medjool dates, pitted

Made another soup last night to use up the last my bone broth. I also had to use up the broccoli that has been in the fridge for a while so I gathered all the veges I could find including the stuff from the backyard to make the soup!

Ingredients:

4 carrots, chopped

1 broccoli, chopped (including the stalk)

1 onion, sliced

handful of kale

handful of spinach

herbs (chives, parsley, basil and oregano from the backyard)

1 can coconut cream

2 cups bone broth

salt

pepper

It's getting a bit chilly here in Perth and both my boyfriend and I are a bit sick. Something warm in the belly always feels good so I made vegetable soup! I know... eurgh... vegetable soup... that sounds gross... But try this and you may just love it! Blended vegetable soup is one of the yummiest things in winter! You can throw in any vegetable you like, boil it down and blend it. My other recipes include sweet potato or cauliflower, but I needed them to make my cauliflower mash and baked sweet potato for my surf and turf and we were running low so I just threw in other veges I could find in the fridge and voila!

1/4 cabbage, chopped

6 carrots, chopped

1 onion, sliced

herbs (I used chives, oregano, basil and parsley from the backyard, lots of it)
