Vegetable Chips
The cabbage, cauliflower and broccoli have been taking over our vege patch with their massive leaves and one day my boyfriend said we should juice the leaves because apparently chlorophyll is really good for you. I was a bit skeptic about eating the leaves so I looked it up online and woah!!! I found out you can do all sorts of things with the leaves! You can juice them, cook them or even make chips out of them! I was so excited when I found out, I went home and plucked a couple leaves off each plant to make sure they don't go bare and started to make the first batch. Here I used kale, spinach, broccoli leaves, cauliflower leaves and cabbage leaves.
Ingredients:
broccoli leaves
cabbage leaves
cauliflower leaves
spinach
kale
coconut oil
salt
- Pluck any stem out, wash the leaves and pat them dry.
- Drizzle some oil and sprinkle the salt on top.
- Mix the leaves together and place them in the dehydrator at 35C for about 5 hours or until they get brittle.
Biltong
The main reason we bought the dehydrator is to make biltongs and I am happy to say we've made them! For those of you who don't know, biltong is South African dried beef... a bit like beef jerky but not really. It is delicious and healthy and delicious.
As I mentioned in my last post, we bought 7kg of chuck steak and used a lot of it on biltong. We cut off the fat to make beef fat, a few slices of steak to barbecue, a few chunks of meat for the potjie and the rest to make biltong.
Ingredients:
chuck steak, sliced
rock salt
apple cider vinegar
ground coriander seeds
pepper
all spice
- Marinate the meat on a bed of salt and place it in the fridge for about an hour. The longer you leave it the saltier it gets.
- Remove the salt off with a knife and brush the vinegar on.
- Marinate the meat with the mixed spices and place them on the dehydrator at 35C for 12 hours.
Sweet Potato Chips
There are many ways to make sweet potato chips. You can fry them in coconut oil, bake them in the oven or dehydrate them. Since we have recently acquired a dehydrator, I decided to dry my own sweet potato chips.
Warning: The jar was full to the brim at 9am. By 5pm, the jar was empty.
Ingredients:
1 medium sweet potato
coconut oil
salt
- Slice the sweet potato as thinly as possible with a sharp knife. Soak them in cold water for an hour, changing the water after 30 minutes.
- Dry the sweet potato and coat the slices lightly with coconut oil.
- Place them on the racks in one layer and sprinkle salt over them.
- Dehydrate for 12 hours at 70C, rotating the trays every couple hours to ensure that they dry evenly.
Anzac Cookies
Made Anzac Cookies for the first time! The cookies, fresh out of the oven, were crispy on the outside and chewy and crumbly on the inside. It was delicious! But they don't taste as good once they get cold like most paleo foods... So I recommend indulging once they have cooled a little bit to let them set and then eat your way through the entire batch!!! or share them with your housemates... Also I had to add quite a bit of water to make it doughy. Will have to try making them with an egg next time and see if it will make a difference.
Ingredients:
1 cup almond meal
1 cup almond, flaked
1 cup dessicated coconut
3 tbsp butter
4 tbsp honey
1/2 tsp bicarb soda
1 tbsp water
- Preheat the oven to 150C.
- Mix the almond meal, coconut and most of the flake almond together.
- In a pot, heat up the honey and butter.
- Mix the bicarb soda with water and mix with the honey mix until it gets frothy.
- Remove the honey mix from the heat and mix it with the dry ingredients until combined.
- Add water if needed to make it more dough-y
- Form small balls with the dough and press down lightly on the baking pan.
- Press some leftover flakes on top.
- Bake in the oven for 35 minutes or until golden brown.
Sultana Meatballs
When I made the cheese and mushroom meatballs last weekend, I made these deliciously sweet meatballs as well. These sweet meatballs balance out the savoury meatballs quite well!
Ingredients:
600g mince beef/lamb
1 cup sultanas
1 cup almond meal
salt
pepper
- Preheat oven to 200C.
- Line baking tray with baking paper and set aside.
- Mix all the ingredients together with a fork or your hands.
- Roll the mix into balls and place them on the tray.
- Bake in the oven at 200C for 25-30 minutes.
Sweet Potato Chips
We had bacon and eggs and sweet potato chips this weekend for breakfast. Whaaaat? Chips for breakfast? It's delicious! It's crunchy and healthy... made from sweet potatoes, spiced with cinnamon and cooked in coconut oil. YUM and it's super easy to make!
Ingredients:
2 tbsp coconut oil
1 small sweet potato
cinnamon powder
- Slice the sweet potato really thinly. The thinner it is, the crispier they become when you fry them.
- In a frying pan, heat up the coconut oil and place a layer of thinly sliced sweet potato.
- Sprinkle the cinnamon powder over the sweet potato and flip them over once the bottom is golden brown. Once both sides have turned golden brown and let it set for a couple minutes before serving so they turn crispy.
Alternatively you could bake it in the oven. Just oil the sweet potato slices and sprinkle cinnamon powder over them and bake in the oven at 170 degree until they turn golden brown and then turn them over.
Chia Seeds
I have recently discovered Chia Seeds and I love them! They don’t
really taste of anything really and they are really healthy for you. They are
high in Omega 3 and fibre. And the funny thing about these seeds is when you
put them in water, they form a gel-like consistency on the outside. It’s both
weird and cool at the same time. I personally don’t really like to have it with
water, but they are really versatile so you can have it with juice or add it to
your food when you cook. The only problem I have with them is they get stuck in
my teeth a lot and I like to munch on them when I’m at work so I have to
constantly make sure that there are no little black seeds between my teeth
before I open my mouth. Try them and let me know what you think about them!
Sweet Potato Muffins
My boyfriend likes weird stuff. He doesn’t have a particularly sweet tooth, but he likes fruits in mains and food you generally see in mains in dessert. I’ve tried a couple recipes and they have all turned out surprisingly well! Here is one of them!
Ingredients:
2 cups almond meal
1/2 tsp sea salt
1/2 tsp baking soda
1 tsp cinnamon
3 tbsp butter
4 tbsp honey
2 large eggs
1 cup grated sweet potato
1/2 cup walnuts, chopped
2 bananas, mashed or 1/2 cup of blueberries, optional
- Preheat oven to 170 degrees. Line muffin tray baking paper.
- Mix almond meal, salt, baking soda and cinnamon together.
- In separate bowl, whisk oil, honey and eggs. Mix almond meal mix in the wet ingredients.
- Fold in sweet potatoes, walnuts and bananas.
- Pour batter in muffin tray and bake for 25-30 minutes.
Sushi with Sweet Chilli Mayonnaise
Deciding what to pack for a surprise picnic can be quite difficult. You can’t bring the conventional stuff like sandwich or cheese and crackers (though we did bring some brie cheese because dairy is one of the few things we don’t cut out. In fact my boyfriend drinks at least 2 litres of milk a day to gain muscle weight – that and lifting of course. Just last week alone, we bought 32 litres of milk and none of it gone to waste). So ended up bring this paleo sushi, paleo cheesecake, avocado chocolate mousse to go with some strawberries, bananas and kiwi and some brie cheese.
Sushi
Ingredients:
canned crabmeat, drained
cucumber, sliced
capsicum, sliced
prawns, deveined, shelled and cooked
eggroll
avocado, sliced
Note: I haven’t actually perfected the eggroll yet, when I have, I will post a recipe on the blog. Make sure to drain the crabmeat, cook the prawns through and slice all the other ingredients up. Lay them on the seaweed sheet and roll it up. I didn’t drain the crabmeat very well so the seaweed got a little soggy but it was healthy and delicious! Go ahead and practice making your own sushi rolls for picnic this summer!
I would also recommend stuffing in pieces of chicken from your leftover roast. Since this was a seafood based sushi, I whipped up some sweet chilli mayo to go with it.

a pinch of cayenne pepper

Chicken Satay & Satay Sauce
My boyfriend loves satay sticks because they are all meat and sauce. I thought I would try to make it for him as a surprise at home one day and then for his birthday for his 4-course meal. That day I made him a soup and prawn satay sticks for entree, a big scotch fillet steak and a chocolate mud cake.
You can make these satay sticks with prawns, chicken, beef, pork or lamb. I normally make these with chicken or prawns.
Satay Sticks
Ingredients:
soy sauce
sesame oil
sugar
corn flour
prawns, chicken, beef, pork, lamb
Satay Sauce
Ingredients:
2 tbsp chunky peanut butter
a dash of coconut cream
a dollop of sweet chilli sauce
a pinch of cayenne pepper
You can make these satay sticks with prawns, chicken, beef, pork or lamb. I normally make these with chicken or prawns.

- Marinate prawns, chicken, beef, pork or lamb with soy sauce, sesame oil, sugar and corn flour. Put them on a skewer and fry them on a frying pan until they are cooked.
Satay Sauce
Ingredients:
2 tbsp chunky peanut butter
a dash of coconut cream
a dollop of sweet chilli sauce
a pinch of cayenne pepper
- Mix all the ingredients over a frying pan on medium heat until the mix is simmering. Add more coconut cream if it is too dry. Serve with the satay sticks.
Bacon and Eggs Muffins
My boyfriend prefers to have bacon and eggs every morning. I try to get up in time sometimes, other times I just make him a protein shake and send him off because I'm too lazy. On weekends I try to make him a surprise.
This day, I found a recipe online. Little bacon and egg muffin cakes. Too cute not to try!
Ingredients:
Strips of bacon
4 eggs
Salt and pepper

- Preheat the oven to 180 degrees. Line the muffin tray with cupcake papers.
- Line the inside of the cupcake papers with bacon strips.
- In a bowl, beat the eggs together. Add salt, pepper and the herbs and mix it together.
- Pour the mixture into the bacon lined cups and bake in the oven for 20-30 minutes.
Protein Shake
Want to get big? Drink this for breakfast! My boyfriend has gotten so big since he started lifting again – gained 10kg of muscles in the past 2 months. I’d like to think that I contributed by feeding him lots and lots of good food. He generally either gets this or bacon and eggs for breakfast if I am bothered to wake up early enough to cook. Weekends I would make something special like Almond Pikelets to change it up a bit… I like to surprise him 
For those of you who are looking to get big, his secret is also to drink 2L of milk everyday. That’s right, we get at least 14L of milk every week just for him. And we don’t get the hi-lo or low fat stuff, he gets the A2 milk… when he can afford it. Mostly we just get the normal full cream milk – it’s more accessible and cheaper. But if you’re trying to get used to drinking more than a glass of milk, start by having this protein shake for breakfast every morning!

a banana
an egg
a heaped scoop of whey protein
handful of berries, optional
