Almond Pikelets
One thing I’ve missed the most since going on the Paleo Diet, was Pancake Sundays. Coincidentally, my boyfriend bought a bottle of maple syrup. So I decided to surprise him and start the Pancake Sunday tradition! I jumped online and found a delicious pancake recipe that both of us enjoyed very much. Hope those of you who are gluten-intolerant as well can enjoy a lovely Pancake Sunday.
Ingredients:
2 eggs
1/2 cup almond meal
1/2 cup coconut cream
1 tbsp butter

1 tbsp butter
- Beat the eggs together.
- Add almond meal and coconut cream to the eggs and mix them together. Consistency should be thick. Add more almond meal if necessary.
- Heat up a tablespoon of butter on frying pan on medium high.
- Place a tablespoon of the mix in the frying pan and flip it over when the mix is starting to dry up. The top side should now be golden brown.
- Cook for another 30 seconds to a minute and serve with maple syrup!
