Sweet Potato Muffins
My boyfriend likes weird stuff. He doesn’t have a particularly sweet tooth, but he likes fruits in mains and food you generally see in mains in dessert. I’ve tried a couple recipes and they have all turned out surprisingly well! Here is one of them!
Ingredients:
2 cups almond meal
1/2 tsp sea salt
1/2 tsp baking soda
1 tsp cinnamon
3 tbsp butter
4 tbsp honey
2 large eggs
1 cup grated sweet potato
1/2 cup walnuts, chopped
2 bananas, mashed or 1/2 cup of blueberries, optional
- Preheat oven to 170 degrees. Line muffin tray baking paper.
- Mix almond meal, salt, baking soda and cinnamon together.
- In separate bowl, whisk oil, honey and eggs. Mix almond meal mix in the wet ingredients.
- Fold in sweet potatoes, walnuts and bananas.
- Pour batter in muffin tray and bake for 25-30 minutes.
