Stuffed Mushroom

Paleo Gluten-Free Stuffed Mushroom Recipe
I like surprising my boyfriend. So I try to make something new at least once a week… whether it’s trying a new recipe online or experimenting with new things. Last Saturday I decided to experiment. My boyfriend being a boy thought that the bacon wasn’t enough and wanted more! So maybe next time I’ll stuff it with more bacon and probably rub some oil on the mushroom as it was a tad dry on the outside.

Ingredients:
2 large portobello mushroom, stemmed
2 eggs
Lots of bacon, cubed
  • Preheat oven to 160 degrees. Beat two eggs and mix in the bacon. Pour the mix into a large mushroom and put it on a tray and bake it in the oven for 20 minutes.
