Cream of Vegetable Soup

Paleo Gluten-Free Cream of Vegetable Soup Recipe
Spring’s here in the southern hemisphere, but it still gets a little chilly at night. Here is a recipe that is bound to keep you and your belly toasty warm!

Ingredients:
3 tbsp chicken stock
4 cups water
6 carrots, chopped
cinnamon
oregano
pepper
 
2 cups cauliflower, chopped
1 can coconut milk
  • Bring the chicken broth to a boil in a large soup pot, and then add the carrots and spices.
  • After a few minutes, add the cauliflower.
  • Boil the whole mess together until the vegetables are soft.
  • Pour in the can of coconut milk.
  • Pour the soup in a blender and blend on high speed until smooth.
