Hash Brown

Paleo Gluten-Free Hash Brown Recipe
My boyfriend brought home bags of sweet potatoes one day from a friend's house so I had to come up with some ways to cook them all so they don't go to waste. This morning I made sweet potato hash browns (with bacon and eggs and mushrooms) and he loved it!

Ingredients:
2 cups sweet potatoes, grated
1 egg
salt
pepper
cinnamon

  • Beat the egg and mix it with the grated sweet potatoes.
  • Add salt, pepper and cinnamon to taste.
  • On a frying pan, heat coconut oil over medium heat.
  • Place a forkful of sweet potato mix onto the frying pan and press it down to form a cake. Repeat until you have enough of little hash browns covering your frying pan.
  • Cook for about 5 minutes or until the bottom is golden brown before you flip it over.
  • When both sides have turned golden brown, it is ready to be served with whatever you want for breakfast!
